Rawganic Vegan Coconut Yogurt Parfaits

A perfect Saturday morning breakfast for the family! Fresh, raw coconut yogurt parfaits. Raw coconut yogurt is so easy to make, with barely any preparation. It is LOADED with probiotics, creamy and delicious, and can be a base for so many different sauces and dressings, and is of course, amazing alone!

You do need fresh whole coconuts to make this yogurt. I’ve tried it with dried coconut before, and it comes out ok, but not creamy, smooth and spectacular.

To make the yogurt all you need is:

~ The meat of 4 or 5 fresh coconuts

~ The water of one coconut

Blend the meat and the coconut water together until fairly smooth, then add the probiotic powder from one capsule of probiotics. Blend a little more. Don’t overblend once you have the probiotics in there.

Place the yogurt in small glass jars, and cover loosely. Place in your dehydrator on 105f, and let it sit in there overnight. If you don’t have a dehydrator, you can sit the yogurt (covered of course) out on your counter to properly cure. The amount of time will depend on the temperature in your home. You know the yogurt is done when it is super light and fluffy. It will have expanded quite a bit in the jar, so don’t fill it too high.

You can make the yogurt plain, and it will have more versatility. For the yogurt in today’s parfait, I added organic vanilla powder because I knew we would be using it for fruit parfaits. I then layered the yogurt with homemade raw macadamia nut granola, fresh mango and fresh banana slices, drizzled with some maple syrup. ENJOY!
