Vegan Banana Oat Chocolate Chip Muffins

I get asked about this recipe all the time, it is definitely a huge hit among muffin lovers! The great thing about these muffins is that they are low fat, gluten free, soy free and of course, VEGAN!

The bananas in this need to be super ripe for the best flavor, and also because that is when bananas are at their healthiest. At only 1/4 cup of maple syrup total, (4 Tablespoons = 1/4 cup, and 3 teaspoons = 1 Tablespoon), each muffin only has 1 tsp. of maple syrup.

INGREDIENTS:

  • 3 medium SUPER RIPE bananas

  • 1/4 cup maple syrup

  • 1/2 cup vegan yogurt (I use coconut home made, but you can use any vegan yogurt)

  • 2 tsp pure vanilla extract

  • 2 cups gluten free oat flour (take GF whole oats and just blend in vitamix, super easy)

  • 1/2 tsp aluminum free baking powder

  • 1/2 tsp aluminum free baking soda

  • 1/2 tsp sea salt

  • 1 tsp cinnamon

  • 1/2 nutmeg

  • 1/4 tsp. ground ginger

  • 1 cup vegan chocolate chips

** Add 1/4 cup chopped walnuts for extra crunch!

Turn oven to 350 degrees. Mix banana, vanilla, maple syrup. Mix dry ingredients and fold into wet mixture. Mix in chocolate chips. Do not overmix. Bake for 16-18 minutes. Makes 12.
