Breakfast Nachos

These breakfast “nachos” are one of my favorite,  fresh and easy  breakfast options. They are so easy, and you can really change up the ingredients to accommodate what you already have on hand in your home! If you’re not in the mood for a juice or a smoothie, or just want something additional to eat or serve to your family and friends, give these a try. They definitely won’t disappoint!

INGREDIENTS:

  • 4 apples

  • 2 TBSP Cashew Butter (can use almond butter)

  • 2 tsp. cacao powder

  • 1 tsp. vanilla powder

  • 1 TBSP sunflower seeds  (or pumpkin seeds)

  • lemon juice

Slice apples into thin slices. Squeeze the lemon juice over the sliced apples. Mix cashew butter with cacao and vanilla, and drizzle over apples. Add a dash of water to make it easier to drizzle if need be. It will depend somewhat on if you refrigerate your nut butters. I always do so I typically need a little water, nut milk, or maple syrup to get it to the right “drizzle” consistency. Sprinkle with sunflower seeds and berries and enjoy!
