Breakfast Pecan Fig Energy Bars

These bars are a perfect quick and nutritious breakfast or anytime snack. There are three ways to prepare these: refrigerate, freeze or dehydrate. I’ve had them all three ways and they are delicious! Feel free to swap out cashews for pecans, almonds for walnuts, and use dried apricots and dates in place of figs.

INGREDIENTS:

  • 1 cup pecans

  • 1 cup walnuts

  • 1 1/2 cup dried figs soaked 3 hours

  • 1/2 cup oat flour

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/2 tsp ginger

Soak figs 3 hours and drain, but reserve water.
Place nuts, figs, oat flour and spices in food processor. Process until smooth. You may need to add a little of the fig soak water to help process the mixture. Don’t add too much, you don’t want it too watery.

Refrigerate or Freeze
Press into square pan and refrigerate or freeze until firm. Cut and serve!

Dehydrate
Press onto dehydrator sheet in a square shape about 1/2 inch thick. Dehydrate 8 hours at 115. Enjoy!
